The shorter you keep your kamado's lid open, the more stable the session stays. The Thermapen ONE Yellow is the fastest meat thermometer in this range: fold out the probe, poke into the thickest part, and within about a second the value shows on the screen. The bright color is no accident, tools that stand out get lost less easily among cutting boards and towels.
What you use it for at Nomad Fire
Steaks and burgers, whole chickens, brisket and pulled pork, but also fish, bread and frying oil. Poke into the center of the thickest part, stay clear of bone and thick layers of fat, and go by the lowest value you see.

For thin cuts like a burger or fish fillet, insert at an angle from the side so the tip really ends up in the middle. Compare it with the bbq thermometers that monitor rather than poke, or check the rest of the tools at bbq tools.
