A utility knife sits between a chef's knife and a paring knife: big enough to cut an onion, small enough to hold a tomato in your hand. This Olive Forged knife is forged and has an olive wood handle, so it steers lightly while still feeling solid. In practice this is the knife that ends up in the sink most often, simply because you reach for it for everything.

The blade is narrow and straight, so you cut precisely instead of rocking. Ideal for herbs, cheese, fruit and trimming meat for the skewer.

When to reach for a utility knife

For everything too small for a chef's knife and too big for a paring knife. Think a handful of parsley, a few mushrooms, a cube of cheese, or picking sinew off a piece of meat. Also nice when you're cutting something quickly and don't want to fill your whole board.

How to work with it

Cut on a wood or plastic board and hold the food with a claw grip. For herbs, scissors or rocking with a larger knife work faster, but for precise cutting this knife steers better. Never cut towards your thumb when working something in hand.

Maintenance
