Caveman Style Asian Carpaccio

This Asian carpaccio is made from teres major, a nice lean and tender cut of beef from the shoulder. And because Jewish people are not allowed to eat meat from the hindquarters of the cow, this cut is also known as 'Jewish fillet'. You can also replace this cut with, for example, a flank steak, or beef tenderloin.

How to make it

  1. Put a very thin layer of steak shake on the steak and let it soak in for 5 to 10 min. Never use oil in a caveman-style preparation. This causes flames.

  2. Then apply a similarly thin layer of Qlimax AP and Big Red Beef. You can replace the Big Red Beef with Bovine Delight if you like.

  3. Using long tongs, place the teres major directly on the charcoal. Find some nice glowing red coals, and let the teres major cook for about 2 min per side, to a core temperature of about 45 degrees

  4. Take the teres major out of the charcoal and let it cool briefly for 10 min. Wrap it in aluminium foil and put it in the freezer for an hour so the meat firms up nicely, making it easier to slice thinly

  5. Halve the cucumber and cut into pieces of about 3 mm

  6. Slice the teres major with a sharp knife into slices of about 3 to 4 mm and arrange over the cucumber

  7. Sprinkle the spring onion and fried onions over the loin

  8. Finally pour the soy sauce over your creation, you can be generous with this delicious salty sauce.
