Char Siu Pork Belly BBQ Recipe

Char Siu is pronounced in many ways. Say it however you like, as long as it tastes good, right? You can usually find all the ingredients for this dish at the Chinese grocery store. In our Eindhoven we have the Amazing Oriental. And if you can't find something, ask a staff member. Otherwise you could search forever. Don't be put off by all the squiggles on the packaging, those are Chinese characters!

How to make it

  1. Cut the pork belly into 3 or 4 equal pieces, this way you can be sure they cook at roughly the same rate

  2. Put all the liquid ingredients like rice wine, soy sauce etc into the dish

  3. Cut the garlic into pieces and add these together with the five spice powder, pepper and salt to the marinade. Mix well. Taste it too, amazing flavour, right?

  4. Now put the pieces of pork belly in the marinade and make sure every nook and cranny is covered with the delicious red marinade. If you're marinating the meat with your bare hands (which is lovely), make sure you wash them well, yes even after marinating, you dirty rascal!

  5. If you don't have much room in the fridge for a dish you can also put the marinade in a ziplock bag. Do close it well though, that red sauce in your fridge won't make you happy. Man oh man...

  6. Once your pork belly has marinated for 4 to 5 hours you can light your BBQ. Let it heat up to a temperature of 135 degrees

  7. Once your BBQ is at temperature, set it up so you can cook the pork belly indirectly over the coals. If you have a kamado you can use the heat deflector

  8. Place the pork belly on the grate and put the temperature probe in the middle of the pork belly

  9. Turn the meat over every half hour. Once the meat has a core temperature of 77 to 82 degrees you can take it off the BBQ

  10. Let your delicious Char Siu rest for about 15 minutes under aluminium foil

  11. Put a pan of oil on the heat, or turn on the deep fryer to fry the prawn crackers. Fry the prawn crackers at a temperature of 170 to 180 degrees. The prawn crackers are done once they float to the top

  12. Now boil 500ml water for the noodles, add a vegetable stock cube and let the noodles soak until done. You can of course also get those noodle sachets with all the seasoning already included. Also very tasty!

  13. Ok, your Char Siu has rested. Take a sharp knife and cut into slices of half a centimetre, place on a nice plate and drape some spring onion and bean sprouts over the pork belly. Because, it looks great!

  14. Now you can also serve the rest of the side dishes.

  15. What do you drink with this? You could of course serve some rice wine, an Asian beer like Bintang is also really nice! Enjoy.
