Grill Bill Half Moon Stone - 23 inch

With the half moon stone 23 inch you cover half of your Grill Bill. On that side you cook indirectly, on the other side you grill directly over the coals. Two cooking methods in the same session, without rearranging anything or lifting anything out of the hot kamado in between.

What the half moon stone 23 inch gets you

With a single round deflector plate, you choose upfront: the whole session direct, or the whole session indirect. Here you don't have to make that choice. You sear a steak over high heat on the open side, then slide it across to the covered side to finish gently to core temperature. Also handy when you're making two dishes at once that can't take the same heat: vegetables and bread behind the stone, meat directly over the coals.

Combining for fully indirect

Want to run a long session fully indirect, say for pulled pork or a brisket? Order a second one, and your grate is fully covered. For most sessions, one stone is plenty.

Maintenance

Let the stone cool down gently in the kamado and scrape off any baked-on fat dry. Never quench it with cold water: the temperature difference can crack the ceramic. Discolouration is normal and doesn't affect performance.
