Binchotan Maitiew charcoal is Japanese white charcoal at its best, fired by BestCharcoal. Carbonising at very high temperatures produces a rock-hard charcoal that gives off barely any smoke or odour and burns exceptionally hot, with a fine, even glow. You get a 7.5kg bag, fully natural.

Why Binchotan Maitiew charcoal

This charcoal radiates an intense infrared heat that cooks the meat evenly and caramelises the outside, with no off flavours or sooty taste. That's exactly what you want for skewers, fish and poultry: the smoke shouldn't take over the flavour. How to light this charcoal

Binchotan is so dense that firelighters alone are usually not enough. Use a lit chimney starter or a gas torch and be patient: once lit, the charcoal holds its temperature for hours. Afterwards, close the vents, let the sticks dry, and simply reuse them next time.

Storing

Store dry and well sealed. Damp coals ignite slowly and produce unnecessary smoke, and with this charcoal you'll notice that directly in the lighting time.
