Roast Christmas Turkey with BBQ Gravy

What weight of turkey do I need? If you allow for about 400-600 grams of turkey per person, you're on the right track. So for 6 people a turkey of about 3.5 kg is enough. For 8 people a bird of about 4.5 kilos, and so on.

How to make it

  1. Put the butter in a small bowl and add zest of 1 lemon, 8 tbsp chicken rub and 4 tbsp olive oil

  2. Press 3 cloves of garlic and add

  3. Finely chop the parsley and add it too, then mix everything well

  4. Take the turkey and loosen the skin at the front and back (don't remove it)

  5. Make 2 balls of butter of about 4 cm and push these under the skin on both sides. Then gently massage it further under the skin

  6. Then sprinkle 1 tbsp chicken rub into the turkey via the back

  7. Cut 2 onions and 1 lemon in half and put these into the turkey via the back as well

  8. Take the bay leaves and now push these under the skin, at the back only

  9. Rub the rest of the leftover butter mixture generously over the turkey and place the turkey in a dish

  10. Cover with aluminium foil and put in the fridge until the next day *

  11. Get the BBQ ready for indirect grilling (heat deflector) and heat it up to 230 degrees

  12. Temperature stable? Put the turkey (in the roasting tray) on the grate for about 10 min. Does the turkey have a nice colour? Then take the roasting tray off the Q now and close the air vents and let the temperature drop back to 150 degrees

  13. In the meantime you can pour the juices and fat in the roasting tray over the turkey. Do this about 6 times.

  14. 150 degrees? Put the turkey (in the roasting tray) back on the grate and leave for about 2 hours. Take it off when the core temperature of the breast fillet is 72 degrees

  15. Let the turkey rest for an hour

  16. Pour the juices from the roasting tray into a pan (on low heat). Add the chicken stock cubes

  17. Take the onions out of the turkey, cut them into large pieces and add to the juices

  18. Cut off the front wings and the tail of the turkey and add to the juices

  19. Cut 3 tomatoes into pieces and add while stirring

  20. Add a sprig of rosemary and thyme and fry briefly

  21. Add 300ml dry cider or white wine vinegar

  22. Take the potato masher and mash everything in the pan. Then let it reduce for 30 minutes. Getting too thick? Then add a little water

  23. Crush the walnuts and put them in the dish you want to serve the gravy in

  24. Take a sieve (hold it over the bowl of walnuts) and pour the contents of the pan into the sieve *. All the liquid in the dish? Then stir it through once more

  25. Now you can carve the turkey and serve everything, enjoy!
