The half moon stone 21 inch splits the grate of your Grill Bill kamado into two zones. On the covered side you cook indirectly, on the open side you grill directly over the coals. That way you don't have to choose upfront between a fast sear and a gentle finish: you do both in the same session.
What you use the half moon stone 21 inch for
Place the stone over half your grate and the other half stays free. Cook vegetables and bread indirectly, for example, while you sear meat directly, or slide a steak across to the gentle side after searing to bring it up to core temperature. That means you no longer need to run two separate sessions.

Placing it
Put the stone in before you fire up, so it comes up to temperature together with the kamado. Placing a cold stone on a hot kamado creates a big temperature difference in the ceramic, and that's not something you want. Make sure the straight edge sits neatly along the imaginary centre line, so the boundary between your zones stays clean.
Maintenance
Let the stone cool down gently in the kamado after use before touching or cleaning it. Cooling it quickly with cold water can crack ceramic. Scrape off any baked-on fat dry, discolouration is just part of it.
