The HORL Whetstone 3000 is the fine stone in the HORL system and picks up where the coarse diamond disc leaves off. That coarse disc removes material and restores the edge; this stone takes out the rough grooves left behind by that process. Your knife not only feels sharp afterwards, it also cuts more cleanly: fewer snags in the fibres, a cleaner pass through meat, fish and vegetables.

When to reach for the HORL Whetstone 3000

Two moments. Right after coarse sharpening, as the standard middle step in the sequence coarse, fine, ultra-fine. And in between, when a knife isn't blunt yet but has noticeably started cutting less smoothly. In that second case you skip the coarse disc, and this stone is often already enough to bring the edge back.

  • Fine grit #3000 for refining the edge
  • Fits the HORL sharpener, always the same fixed sharpening angle
  • Suitable for chef's knives, Santokus, boning and carving knives
  • Also great as a quick maintenance round between two full sharpening sessions
  • Prevents removing more steel than necessary

How to use it

Work calmly with even pressure, and keep the number of strokes the same on each side. Pushing too hard doesn't produce a sharper knife, only more wear. Roll the sharpener along the full length of the blade, from heel to tip.

Maintenance

Wipe the sharpening dust off the stone after use and let it dry before storing. A stone clogged with metal dust works more slowly and gives an uneven result.

Bill's tipSharpen briefly and often rather than long once a year. A knife you touch up regularly barely needs the coarse disc, so it lasts years longer.

Want the edge fully polished smooth afterwards? Finish with the ultra-fine #6000 stone. For heavier work, reach for the coarse diamond stone. All sharpeners, stones and stands are together in the HORL knife sharpeners category.
