A long session on the kamado stands or falls with tracking two numbers: how hot is it under the lid, and how far along is the meat. The ThermoWorks Smoke measures both at once and sends them to a separate receiver, so at Nomad Fire you do not have to step outside every quarter hour to check whether the fire is still holding steady.
What it gives you in practice
The base station stays with the barbecue and reads out both probes. The receiver in your pocket beeps as soon as a value falls outside the limits you set yourself. If your fire drops during an overnight session, you know before the brisket suffers for it.
