Not every session needs a large pan under your meat. This small drip pan catches the fat and juices from a few pieces of meat, without you losing half your grilling space. Fat drips onto the pan instead of into your coals, saving you smoke, soot and cleaning work on your ceramic.

When small is enough

For chicken, pork belly, a single rack of ribs or a roast for the family, this size works perfectly: shorter sessions of a few hours, where the fat does not come down by the liter. If you are planning a whole shoulder or a full slab of ribs, the large size is the smarter choice.

Use

Place the pan on or just above your heat deflector, never directly on the glowing coals, and make sure it sits under the thickest part of the meat. Fat rarely falls straight down, so place it slightly in front of the meat rather than directly underneath.
