Smoking Wood Chunks Pecan - B&B
Pecan gives a fantastically mild aroma and is a favourite everywhere, slow cooking with this wood is a recipe for an unforgettable meal.
Delicious with: Beef, pork, poultry, game, lamb and cheeses
The wet method:
For moist and flavourful smoke, soak the chunks in water for at least 30 minutes. Drain and place 3 or 4 pieces directly on the hot coals.
The dry method:
For a gentle smoke release, place 3 or 4 pieces directly on the hot coals. Let the pieces catch and use tongs to move them to the side. This way the pieces can smoulder slowly without flaring up.
- Try experimenting with soaking in beer, wine or fruit juice. This makes the flavour even more complex
- The flavour is in the smoke, so try not to open the kamado too often.
- A bottle of water nearby is handy for keeping flare-ups under control and for adding moisture while grilling.
